Mount Gay Rum Knickerbocker
A vibrant Mount Gay Rum Knickerbocker that blends Eclipse rum with Cointreau, raspberry syrup and fresh lime, served over ice with a raspberry and lime garnish.

Recipe:
- 45 ml Mount Gay Eclipse Rum
- 10 ml Cointreau
- 15 ml raspberry syrup
- 15 ml fresh lime juice
- Raspberries and lime wedge to garnish

Method:
- Add all ingredients into a shaker filled with ice and shake well until chilled.
- Strain into an ice filled rocks glass, such as a Michelangelo Masterpiece DOF
- Garnish with fresh raspberries and a lime wedge, then enjoy responsibly.

Make it your own at home: try switching raspberry syrup for fresh muddled berries, or adjust the lime juice to taste if you prefer a brighter or softer citrus balance.
